What You’ll Do

The Sous Chef is responsible for supporting the Head Chef of ROAR in all Kitchen and BOH operations and serves as a source of inspirational leadership with a passion for culinary excellence. This is a hands-on role responsible for supporting day-to-day kitchen operations, forecasting, budgeting, and menu creation, all while providing positive and loving mentorship to the next generation of Chefs.

Responsibilities include:

• Passion to make guests’ dining experiences special, encouraging and instilling a passion for all things culinary and keeping artistic flair alive.
• Provide ongoing training, coaching and development by contributing to timely performance reviews for all Back of House employees, and supporting employees to find paths to sustainable success.
• Support in all Back of House employee hiring and training needs, utilizing resources to deliver and maintain expertise at all levels.
• Maintain a working environment that is both inclusive and collaborative with team members at all levels, promoting a culture of development from within.
• Participation in strategic planning, business plan development, and promotional planning.
• Managing and running the onsite greenhouse to grow unique and interesting ingredients to support our menu, specials, and highlight the unique live-fire cooking of ROAR.
• Working with the Restaurant Manager and Chef to educate BOH and FOH team members on ingredients, dishes, and local sources of food in order to elevate our guests' experience.
• Support the Head Chef in managing labour costs according to business needs. Daily review of sales & labour, actuals vs projections and proactive response to required adjustments.

What You Bring

• Minimum 2 years’ experience in a leadership role
• 3+ years’ experience in food preparation - experience as a Sous Chef, or Chef de Cuisine, is a strong asset
• Financial management skills such as basic accounting, payroll, and budget calculations
• Good understanding of computer programs (MS Office, restaurant management software, POS, Inventory systems, payroll software, etc.) Knowledge of Optimum Control is an asset
• Red Seal, Certified Chef de Cuisine designation, or Culinary Arts Diploma is an asset or equivalent experience
• Knowledge of greenhouse operations is an asset
• FOODSAFE certification required
• Experience and knowledge of recruitment, selection, training & development, and performance management of kitchen staff
• A team mentality to solving business objectives and challenges, using the expertise of your team to find creative solutions

The General Manager is our hotel’s primary source for inspirational leadership. In your first 3 months, you will…

·        Work closely with Catinka (your Regional Manager) to learn the ins and outs, history of the team, and current challenges and successes of the Kelowna property.

·        Spend some time at our Accent Inns Kelowna location, working closely with their leadership team

·        Meet the Finance team to learn current practices for tracking and managing your budget for Kelowna.

·        Meet every member of your team 1-on-1 to learn more about who they are, and give them the opportunity to learn more about you and your background.

·        Take ownership of the day-to-day scheduling and management of the hotel.

·        Review our current processes and procedures and develop a plan in collaboration with stakeholders on your team to create a plan to address any opportunities that have been identified.

·        Meet with Laura (your HR Business Partner) to run through GM responsibilities around performance management, leadership, and HR procedures.

·        Begin to champion the Pickle Program (our internal recognition program) with the team.

·        Take over any recruitment needs for the hotel and learn our process for hiring and interviewing.

·        Become an expert in the daily review of pick-up, off-market, forecasting reports, etc. to maximize revenue and labor for your hotel.

This exciting role will be key to the continued success of Hotel Zed Kelowna. You will have a unique opportunity to build upon an amazing foundation and position Hotel Zed as the place to be in Kelowna, and create a ripple throughout the local community.

1)    Create memorable brand touchpoints that drives loyalty

• Thousands of conversations happen in our Happiness Hub and these conversations are our opportunity to make people love us. Make every conversation count - contacting the Happiness Hub either by phone, email, SMS or social should reinforce our brands and make every customer smile

2)    Drives sales by booking more rooms and maximizing yield

• Don't leave any money on the table. Ask questions to uncover opportunities, use storytelling to showcase why our properties are the perfect fit for the customer and ask for the sale.

3)    Be the communications and service center for customers

• Help us deliver outstanding customer service on property by capturing customer information when you make reservations so it is shared with our properties.
• Set expectations and showcase hotel amenities pertinent to the customer conversations. Suggest local events or restaurants to enhance their stay.
• Drive loyalty for our important preferred corporate clients, groups and travel trade customers with outstanding and seamless service and communications.

• Previous sales and/or hotel experience is preferred

What You'll Do

As 1st Cook you'll be responsible for smooth execution, organization, and cooking of all food requirements at ROAR. The 1st Cook plays a key role in development and attention to Health and Safety practices and as such is role model, coach, leader, and ambassador. Key aspects of the role include:

•  Manages food quality, portion control and plate presentation through 100% recipe adherence throughout the team
•  Supports head Chef in culinary direction by providing specials and new menu ideas
•  Lead by example throughout entire shift
• Train and coach new and existing employees
• Assist kitchen Leadership team in maintaining and improving Labour and Food Costs
• Supervise standards of cleanliness, timing, organization, production, food quality, and consistency through ensuring completion of operational checklists
• Monitors and leads by example in kitchen cleanliness
• Ensure all products are prepared, held, and served at correct temperatures and correct visual appearance
• Accurately complete all orders with uncompromising quality and consistency

• Organization is your Zen. You can effectively move between tasks and prioritize appropriately between execution, operational tasks, and cleanliness

Job Requirements

• 3 -5 years culinary experience in a full-service restaurant 
• Breakfast experience and availability (7am starts)
• Live fire knowledge an asset but not required
• Must be innovative, detail oriented and quality driven
• Must be responsible, able to take initiative, maintain supervision in a fast-paced high-energy environment
• Creative, energetic, with good interpersonal and communication skills
• Ability to work flexible hours including mornings, days, evenings, nights, weekends and holidays
• Culinary degree or diploma considered an asset but not required
• Food Safe BC
